FES

A Journey Back in Time
Fes's medina, a UNESCO World Heritage Site, holds Al-Qarawiyyin, the world's oldest university. Admire the facade before exploring the neighboring Al-Attarine Madrasa and its tilework up close. From there, your guide takes you through the medina's historic tanneries, where craftsmen still work by hand, taking a break at a traditional home for mint tea and a glimpse of daily life. In the afternoon, wander the souks for spices, textiles, and ceramics, with a pause at Bab Bou Jeloud, the medina's ornate gateway, before the day winds down.
Head up to a rooftop terrace overlooking the ancient Fes Medina as the afternoon turns to evening, settling in with a spread of traditional Moroccan snacks and drinks, tea, water, or juice alongside pastries or dessert, while the city's rooftops and minarets spread out below. Watch the light shift as the sun sets and the Medina slowly comes alive after dark, a quieter way to take in Fes from above.
Elevated above the medina of FÈs, Palais Faraj invites guests to indulge in a culinary tapestry woven from Arab, Jewish, Berber, and French traditions. At its heart lies L’Amandier & Rooftop Garden, where refined Moroccan and Mediterranean flavors are served al fresco on a prized terrace offering breathtaking views of the city. For more intimate moments, private tasting menus can be arranged in the elegant Fireplace Lounge or on your suite’s terrace. Meanwhile, the Golden Bar delivers cocktails, fine wines, and tapas in a romantic setting, and the Tea Room in the Grand Patio offers light bites and fresh juices in the shade of orange‑tree arcades.

Strolling the Magical Streets
The day opens at the Ben Youssef Madrasa, once the largest Islamic school in North Africa, its cedar ceilings and mosaics still intact. From there, pause at the Secret Garden, its fountains and greenery a contrast to the medina's pace. The afternoon continues at the Bahia Palace, its Andalusian courtyards built for a 19th-century vizier, then wander through the souks, taking in the smell of spices and sounds of daily life. The day ends at Jemaa el-Fna, UNESCO-recognized for its street performances, turning into an open-air theater at dusk.
At La Maison Arabe in Marrakech, dining is a journey through elegance and tradition. Le Restaurant serves refined Moroccan fare beneath a painted zouakÉ ceiling, with antique palace doors, warm tadelakt walls, and live Arab-Andalusian melodies. Nearby, Les Trois Saveurs - “The Three Flavors”- invites al fresco evenings beside the pool garden under handcrafted lanterns, with a menu blending French, Moroccan, and Asian influences. For a lighter, international‑inflected option, The Rooftop offers fusion cuisine inspired by the colors of Majorelle Garden and a fresh take on Moroccan flavors. Breathe the Mountain Air
The hike begins in a small village at the edge of the High Atlas, tracing trails through green valleys, terraced fields, and juniper forest toward Berber hamlets where daily life continues much as it has for generations. As you ascend, the path opens to views of snow-capped peaks, Mount Toubkal, North Africa's highest, rising above the rest, with your guide pointing out local flora, fauna, and geology along the way.
